Raclette is a derivation of the French word for “scraping off.” It is now used to describe certain Swiss cheeses as well as this popular Swiss dish. When buying the cheese, look for Swiss mountain cheeses like Aniver, Bagnes, Conches, Gosmer and Orsieres. The rims are often embossed with the word “Raclette.”

Ingredients

  • ½ wheel Raclette
  • 1 small jar cornichons
  • 1 small jar swe

Method

Place a semicircle of Raclette on a board or heatproof platter. Position the board or platter at an angle next to the glowing coals of a fireplace. A brick placed underneath will do just fine.

Heat the plates until very hot and place them under the cheese as it melts. When the cheese begins to ooze freely, scrape some onto the plates, one at a time as the cheese melts.
