Sugar and spice aren’t necessary when baking just-picked apples. A little cider in the pan is all you need, and when there is none, I throw in the peels and core with a cup of water to intensify the flavor.
Core the apples and peel the skin away, leaving approximately a 1½-inch band around the apples.
Place the apples in an ovenproof baking dish approximately 2 inches apart and pour the cider over the apples.
