Apple sorbet is a refreshing entremet at any grand dinner and an especially festive dessert when served with sauce anglaise or warm caramel sauce.

Ingredients

  • 6 red apples (such as Idared, Cortland or Rome)
  • 1 tablespoon lemon juice

Method

Wash the apples and cut them into quarters with their skin and seeds. Place the apples in a nonreactive saucepan and mix with the lemon juice. Add the water and sugar and bring to a boil over high heat.

Reduce the heat, cover and simmer for 45 minutes, or until the apples are soft and mushy. Stir in the vanilla.
