This pancake harks back to days at my grandmother’s when she would whip up a couple, all golden and fluffy, and serve them after a pot roast dinner. Serve as a late breakfast or with afternoon tea.
In a large bowl, sift the flour, sugar, baking powder and salt. In a medium bowl, whisk the eggs and add the milk, beating until smooth. Fold the flour into the egg mixture and add the melted butter, zest, vanilla and nutmeg. Beat until smooth. Set aside for 30 minutes.
