You need the best and sweetest tomatoes (cherry tomatoes are also good). Make this in advance so the flavours have time to mingle (later on you can dip bread into the juice that collects at the bottom of the tomato bowl). If you’re feeding adults, this is wonderful with a chopped fresh red chilli tossed through just before serving. Or you could tear up a few basil leaves and toss them in. It is sometimes just the simplest of things that you need to accompany a meal like hamburger patties, but this is also perfect for lunch with bread and a good piece of cheese (I like mozzarella or feta).
Cut the tomatoes into chunks and put them in a serving bowl. Add the garlic, olive oil and salt to taste. Crush the oregano between your fingers and add to the bowl. Toss together gently and then leave to marinate for an hour or so before serving.
