This is lovely and sweet and goes very well with roast pork or chicken, and also game if you happen to be serving that. I use organic pumpkin which is a beautiful reddish orange outside and butternut orange inside. Make sure you start off with a lovely pumpkin, but if you suspect yours is not very ripe and tasty, you could add a little more sugar. You might like to add another vegetable here too, like turnips or other root vegetables. You can also add some ground cinnamon before baking. I use a 32 cm (about 12 inch) round baking dish, but you can work out how many you need to serve and what size dish will be right, as these are very easy amounts to adjust.
