My kids absolutely love to help me roll these in their small sweet palms — although it is difficult for them to try not to lick all the mixture off their hands. These are from a friend of Giovanni — he tasted them at work and spoke about them in such very descriptive terms that I made him hound her until she finally gave me the recipe.

Ingredients

  • 3 hazelnut wafer biscuits
  • 250 g(9 oz) roasted peeled hazelnuts, chopped quite finely

Method

Crumble the biscuits into a bowl and add the hazelnuts and about two-thirds of the hazelnut spread to start with. Mix together until it all looks a bit like mud cake. Try rolling a small portion into a ball — if it breaks up, mix in more chocolate hazelnut spread until it will hold a shape. If the weather is hot, put the mixture into the fridge for a while before rolling.
