You can serve these on their own or with some vegetables that have also been cut into thick sticks, dipped in the batter and fried. Zucchini (courgettes), green beans, artichokes and cauliflower are all lovely like this. I like to serve a bowl of thin chips alongside as well.
Whisk the eggs and lemon rind in a bowl. Sift in the flour, baking powder and paprika and add some salt and pepper. Whisk in the water and continue whisking until the batter is smooth — it will be a fairly thick batter.
