When I was a child they recommended jelly and ice cream after tonsil operations because it goes down so well when you have a sore throat. I forget about jelly sometimes and then, when I remember, I make it — because actually it’s like giving your child a slice of pure fruit juice. I make it with a good pure-as-possible juice — you can use any flavour you like but you do need colour in your jellies. Serve the jellies plain, or with a small scoop of vanilla or buttermilk ice cream or even a little pile of the actual fruit, served on the side with a dusting of icing sugar. You can just make three pomegranate and three apple jellies and forget about the stripes, if you’re short of time.
