Once you know your family’s favourite flavours, you can really have fun here. Serve these in a big bowl or glass for a very special treat, with your own home-made chocolate, toffee or fruit sauce and freshly whipped cream. One scoop chocolate, one scoop vanilla, one scoop maple syrup ice cream with chocolate sauce is also good. You can also make sorbet sundaes (mango, pomegranate and strawberry) with a little whipped cream. And you can also scatter some chopped nuts over the cream and add chunks of fresh fruit, too. You can go quite over the top, as long as there are not too many kids seated and waiting.


For Each Sundae


Drizzle a little of the sauce or syrup around the side of a sundae bowl or dessert glass so that it sticks there. Put the ice cream in the bottom, top with the cream and drizzle the syrup or sauce over the top. Leave it for a few minutes for the syrup to run down through the cream and ice cream, then serve before the ice cream melts too much.

My children like to have a scoop of chocolate and a scoop of vanilla. And I watch them stirring and staring into their bowls through the various stripes and streaks of brown and white that finally settle into beige soup. It flings me right back in time to my childhood.
