My friend Julia, who is a marvellous cook, showed me this. You could also make it with leftover roast meat — all pulsed up in a processor. Use a large baking tray so that your vegetables can sit quite flat and are not steaming on top of each other. If you prefer, leave out the sauce-making at the end and just serve this with tomato sauce.
