Cauliflower and Olive Salad



Boil 600g/1lb 6oz of cauliflower florets in salted water till tender. Drain and put into a bowl with 100g/oz of pitted mixed olives. Add 1 teaspoon of ground coriander, 1 teaspoon of ground turmeric and ½ teaspoon of ground ginger and season with sea salt and freshly ground black pepper. Mix well, and drizzle with extra virgin olive oil and the juice of half a lemon.
