I can’t put my finger on what this cheese resembles in terms of its dairy counterpart, but I’m sure I’ve had something like this in the past. This air-dried cheese has a brown rind, a creamy interior, and a strong, nutty, piquant flavor. It goes well with beer and other beverages that hold their own against a slightly salty, full-flavored cheese.
