Because the creamy component of coconut milk is high in saturated fat, it can be whipped just like heavy whipping cream, complete with the light, fluffy, and oh-so-rich texture and mouthfeel of whipped cream. If you want to mask the coconut flavor, good-quality vanilla extract will do the trick, as in this recipe, or you might add a little brandy. While it is delectably vegan, it’s still high in fat and calories, so you may want to save it for special occasions. Be forewarned that you can’t
