This is my go-to raw crust for cheesecakes and other desserts. It’s as easy to make as a graham cracker crust and just as tasty, but much more healthful—and gluten-free.


  • 1 cup raw almonds
  • 10 to 12 pitted dates
  • 2 teaspoons vanil


  1. Process the ingredients.

    Put all the ingredients in a food processor. Process until crumbly, sticky, and thoroughly combined.

  2. Pat into the pan.

    Transfer to a 9-inch springform pan and press the mixture in an even layer over the bottom of the pan.
