Method

Whiting are done the same way, but require a sharp oven, or they will turn watery. Weaver may be done in the same manner.

Conger Eels

Cut four slices, half an inch thick, dry well, dip each piece into flour, and proceed precisely as for soles. A little grated horseradish and a little spice will vary the flavour.
