Method

The heart does not enjoy a very high reputation. I mean not only with the wealthy, but with the laborious part of the population, in consequence of the difficulty experienced in cooking it properly. It is thus generally left on the hands of the butcher, and consequently sold cheap; but I trust these receipts will occasion a change, and induce them to purchase those provisions which are now despised.
