Any part, not too fat, is exceedingly good done in this way: Cut two pounds in slices, rather large and thin, season with salt and pepper, then add a few slices of fat, then some slices of potatoes, then pork and then potatoes, until all is in; add half a pint of water. Bake one hour and a half.
