Method

It should be cut as above, and put into a bowl, with half water and half vinegar to cover it; four teaspoonfuls of salt and one of pepper, four of brown sugar, two onions cut in slices, a little thyme, a bay-leaf, cloves, peppercorns; turn them now and then for four days, and cook as above, with the marinade in.
