Method

These should be washed, but not scraped, and put into the pot with the skin on; when done, which is known by pressing the thick part, to see if it is soft, or by probing it with a skewer; remove the skin, cut it into slices, put it in a pan, with either gravy, butter, or milk, and a little vinegar, salt and pepper, boil it up, and serve. It is also good when cold, for salads.
