Method

Wash a quarter of a pound of rice, put into a stewpan with a pint and a half of milk, three ounces of butter, three ounces of sugar, lemon-peel, simmer till the rice is tender, add two eggs, previously well beaten, mix quick, put in pie-dish; bake half an hour, or till set.
