Wash one pound of rice, put it in a stewpan, with a pint of water, put it on the fire; when the rice is well soaked add a quart of milk, quarter of a pound of butter, grated lemon-peel or a little nutmeg, or a piece of cinnamon, boil till thick, then add two eggs, well beat, a little salt, and a quarter of a pound of sugar; place all in a greased pan or tin breadpan; bake one hour, and serve with sugar or jam over.
