This delicious little thing is nothing more than a quick Chinese-style pickle, though the orange zest makes it special. Serve it as either a side dish or starter.

Ingredients

  • 1 medium cucumber, peeled, seeded, and cut into strips about 2 inches long and ¼ inch wide

Method

  1. Toss together the cucumber, salt, and sugar in a small bowl and marinate for 20 minutes. Toss in the vinegar, oil, and chile and marinate for another 30 minutes.
  2. Toss the mixture again, then grate the orange zest over the top and serve.
