Homemade nuoc cham, Vietnamese table sauce, really brings out the flavor of the fish and fresh vegetables in this sharp, refreshing dish. Finishing it with Peanut Sauce and crushed peanuts gives it great depth of flavor as well as crunch.
Turmeric, a gnarled root with brilliant orange flesh, can sometimes be found fresh in Chinese and other Asian markets; definitely use it if you have it. But the much more common dried and ground turmeric is fine too.
