This is the best accompaniment to any saucy Asian-flavored dish. The rice grains are tender, but still chewy, and have a rich, subtle sweetness. Steaming the rice in banana leaves imparts an incomparable aroma to the dish.

Ingredients

  • 1 cup sweet rice (also called glutinous rice), soaked overnight in cold water
  • ½ cup coconut milk

  1. Prepare a steamer. Drain the rice and wrap loosely in cheesecloth. Place in the steamer and cook until tender, sticky, and elastic, about 10 minutes. Unwrap and let cool for a minute.
  2. Transfer the rice to a large mixing bowl and stir in the coconut milk, nam pla, and sugar. Taste and adjust the seasonings if you like.
