Passion fruit is a great flavor for soufflés, making this sweet-tart dessert light and rich. Though you must bake these immediately before serving, you can make the batter and fill the ramekins ahead of time and refrigerate, uncovered, for up to 8 hours. This makes it an ideal dessert for my restaurants and for your home.

  • 1 cup sugar, plus more for sprinkling

  1. Preheat the oven to 350°F. Generously butter and sugar six 3-ounce ramekins, including the tops of the rims.
