This is a classic combination of Thai flavors-bitter, sour, salty, and sweet-in a dessert. (The lime zest provides a subtle bitter overtone.)

You can make the rice pudding ahead of time and refrigerate it until ready to serve. Bring the pudding to room temperature and then torch the sugar and add the passion fruit sherbet and seeds immediately before serving.
