A classic Texas brisket only needs two simple things: salt and pepper. As I’m sure you know by now, the flavor of the beef shines the most when you don’t overcomplicate the rub. We use kosher salt and 16-mesh ground black pepper for the larger granules that give you a killer crunchy bark. Lastly, depending on the cook and what we want to pair with the brisket, we sometimes add white pepper to the rub for some earthier tones.
