Nam jim jaew is an extremely versatile sauce that goes absolutely perfectly with grilled and smoked meats because of the citrus, spice, and funk. The sauce is super easy to make, and the toasted rice powder is what sets it apart from similar sauces like the jeow som. The toasted rice adds a little bit of texture and a unique, smoky aroma. Originally from the Isaan region of Northeast Thailand, it has since proliferated throughout all of Thailand due to how delicious it is!
