Method

In a large saucepan, heat vegetable oil on low to medium heat.
Add minced lemongrass and garlic. Lightly sauté in oil for about 2 to 3 minutes until fragrant.
Add in red curry paste and mix well. Continue stirring for another 3 to 4 minutes until the paste becomes extremely aromatic.
