Chargrilled oysters are an extremely popular street food in Vietnam. They’re commonly eaten as a late-night snack with Saigon beer and other libations of the sort, but we include them with the appetizers here. Being inebriated might add to the experience, but trust us when we say that these oysters sing on their own. The combination of using scallion oil— a popular Vietnamese way to grill—and roasted peanuts creates the most unbelievable smell. If you were in Vietnam, we can promise that yo
