Honey Sriracha Pulled Pork Sandwich with Pickled Green Papaya and Penang Mayo

On the surface, this seems like a simple, basic pulled pork sandwich—which wouldn’t be a bad thing. But this banger of a sandwich adds a crunchy and tangy pickled green papaya as well as a spicy, sweet honey sriracha sauce to level up an already great sandwich. This sandwich is the unofficial sponsor for our Curry Boys back-of-house crew, as they seemingly have it for “staff meal” 75 percent of the time. Special shout-out to Chef Richard for this creation!
