Smoked Coconut Cheesecake

I have a confession. I’ve never been to the Cheesecake Factory, and I’m low-key embarrassed by that fact. I had a good buddy tell me his favorite thing there was a coconut cheesecake, so, to double-down on my embarrassment, that was the inspiration for this recipe. I figured if we were going to do a cheesecake, why not smoke it for that gentle smoke-kissed flavor too. And, good Lord, is this thing addictive.
