Each Tuscan winemaker makes his own version of vin santo or ‘holy wine’, but because of the painstaking and lengthy production it is extremely difficult to buy outside Tuscany. Made from semi dried grapes, it must be aged for a minimum of 3 years before emerging into the sunlight is vin santo. At its best it has a wonderfully smoky aromatic flavour rather like fine old sherry or Madeira and is traditionally served as a dessert wine with Biscotti di Prato<
