Schiacciata means ‘squashed flat’ and this is a very ancient flat cake that has been made at the time of the vendemmia (grape harvest) in Tuscany since Etruscan times over 2000 years ago. It was devised, like so many dishes, as a method for using existing materials; left-over bread dough for the base and quantities of black wine grapes for the topping.
