Crostini Rossi

Piquant tomato crostini


  • 1 piece whole wheat bread
  • 1 clove garlic
  • 1 tbsp capers
  • 3 tbsp olive oil
  • coarse salt
  • freshly ground black pepper
  • wine vinegar
  • 3 tbsp fresh parsley
  • 2 tbsp fresh thyme
  • 2 large ripe tomatoes, peeled
  • 8 pieces French bread or deep fried polenta


Soak the whole wheat bread in vinegar and wring out well. Put in a mortar with the rest of the ingredients (except for the French bread) and pound to a rough paste. Chill and serve on toasted French bread or deep fried polenta.
