Buca di San Francesco is one of a group of restaurants ‘del Buon Ricordo’ (good memory), established to keep alive the traditions of regional cooking in Italy. Each one has a dish, like this one, particularly typical of the area, called the Piatto del Buon Ricordo; and a regional menu that the restaurant’s owner will recommend on request. This recipe uses spinach for the sformato, but is equally good made with nettles or swiss chard.
