Pici is/are an amazingly time-consuming, completely hand-rolled pasta with no eggs, originally made only by and for the very poor in the area around Montepulciano. They consist of just flour, salt and water. The following is a very approximate recipe.

Ingredients

  • 12 oz/350 g plain flour, sifted

Knead all the ingredients together to form a stretchy pasta dough. Leave covered for 20 minutes. Roll out until the dough is ¼ in/5 mm thick and cut into strips of ½
