This is a very festive looking risotto.
Cook the onion in oil in a sauce-pan & when beginning to brown, add all the vegetables except the tomatoes. Cook 10 minutes over moderate heat & add tomatoes, salt & pepper. Cook for 15 minutes & then pour in the rice & a little hot stock. Continue adding tablespoons of hot stock every few minutes as the rice absorbs the liquid.
