Tonno e Fagioli

Method

To make the classic bean salad, substitute 7 oz/200 g dried white beans for potatoes. Soak the beans overnight. Rinse and boil in fresh water until tender (1-1ΒΌ hrs). Drain and follow the recipe. If using fresh cannelloni beans boil in water for 40 minutes. This makes a lovely summer meal when served with chilled Pappa al Pomodoro.
