Shortly after opening his own restaurant in 1976 Sergio wrote a cookbook with everything in it from tips on how to organize a good kitchen, to recipes retrieved from rare sixteenth-century notes found in a Tuscan library. Among the recipes was this one from Arezzo for Zuppa del Tarlati Vescovo which Bishop Tarlati may well have brought with him from the papal court in Avignon. Its creamy richness bears a close resemblance to the French ‘Soupe à la Reine’.
