Sergio originally comes from Camaiore, between Lucca and Viareggio, an area that probably has more soup recipes per square mile than anywhere in Tuscany. This is one for a fish soup that unlike cacciuco, is very simple to prepare. A speciality of the trawling fisherman of the river Serchio, it should, if possible, have eel in it to make a good traditional soup.
