This is one of Franca’s special recipes. When the ‘cartoccio’ is opened at the table it gives off a delicious aroma that is one of the highlights of the dish.
Put 5pt/3ltr water in a large saucepan and bring to the boil. Meanwhile heat the oil in a cast-iron pan and in it cook the chili, garlic and all the fish. After 5-10 minutes, add the tomatoes, basi
