Rare are those humans who have never heard of Sachertorte, the world-famous chocolate cake. But few are those who know that its creator was Jewish and why that matters. Franz Sacher was the Jewish pastry chef responsible and, significantly, he was one of a long, abundant line of Central European Jewish pastry professionals. Contrary to popular belief, the cake was not created in 1832 and it was not created in Vienna, but in Pressburg (today’s Slovak capital Bratislava).
