Thick, creamy, rich hot chocolate served with churros (long, ribbed, crisp dough fritters) is a popular breakfast in Spain. Chocolaterías specialise in the drink, which is made with dark bitter chocolate and a little cornflour to thicken the milk. The amount of sugar needed depends on the sweetness of the chocolate.

Ingredients

  • 2 tsp cornflour
  • 500 m 1/18 fl oz/generous 2

Method

  1. In a small bowl, dissolve the cornflour in 2 tablespoons of the cold milk.
  2. Bring the rest of the milk to the boil in a saucepan, then pour in the cornflour mixture, stirring with a wooden spoon.
