My son adores mint choc chip ice cream, as do I. So, when inventing a new Pesach recipe, I decided those flavours may just work to pep up the (let’s face it) slightly dull, annual macaroon. The result was chewy, crunchy and different. If you don’t like mint, replace it with orange zest or just stick with dark chocolate.

  • 200 g/7 oz/1 cup
