Ensalada Andaluz

The inspiration for this salad is a Spanish salad that combines potatoes, oranges, and almonds with a very rich mayonnaise. In it, the celery and onions are dressed with a second vinaigrette, and the spinach with yet another. It all seemed like too many steps and too many flavors, so here is my streamlined version. Simple to prepare and only two tosses!
