This cheese spread is lovely as an hors d’oeuvre topping for crackers or croutons. Or it makes a great sandwich, with good rye bread, some sliced cucumbers, and a few leaves of watercress. The cheese mixture is also good mounded on polenta strips and baked in the oven. Incidentally, in northern Greece, especially in Salonika, there is a similar feta cheese spread called htipiti; it uses oregano and green hot and sweet peppers as the seasoning, and is bound with olive oil and lemon juice.
