Another salad to put between slices of bread. French or Italian bread, sesame seed, pita, or whole grain breads are best. Instead of using a mayonnaise, this sandwich gets an oregano garlic vinaigrette. A few slices of cooked leg of lamb added to this makes for a more complex and filling combination.


  • 2 large garlic cloves, finely minced
  • 1 tablespoon pan-toasted dried oregano (see note)

Whisk together the garlic, oregano, oil, and vinegar in a small bowl. Season to taste with salt and pepper.

Pour a little of the vinaigrette over the onion in a small bowl and let marinate for about 10 minutes.
