Of all of the many pita (filo pies) I tasted on my last trip to Greece, this was my very favorite. Naturally I asked the woman who made this for the recipe, and through a translator I was told that the pumpkin squash was grated and then cooked in butter and the layers of filo were sprinkled with a little cinnamon sugar.
